  • Method: Toss the split potatoes directly into melted duck fat with the garlic, rosemary, salt, and pepper until heavily coated. Spread them cut-side down onto a hot baking sheet. Roast at 425°F (218°C) for 25 minutes until the skins are deeply blistered, crispy, and dark. Serve hot alongside a savory main course.
